MA! THE MEATLOAF! While watching Wedding Crashers the other night I was reminded of one of my childhood favorite comfort foods. Although meatloaf can sometimes get a bad reputation for being dry and overcooked its simple and fast to make. Try out this recipe with some mashed potatoes for a meal to fill up your belly and warm you heart.


1/2 lb ground turkey
1/2 lb ground lean beef
3/4 cup plain bread crumbs
1 envelope Lipton Beefy Onion soup mix
2 eggs
1/3 cup ketchup
1 garlic clove minced
1/2 cup French fried onions
1/2 cup grated Parmesan cheese

1. Preheat oven to 350. Mince the garlic and shallot then add it with a splash of olive oil to a pan over medium heat. Dice the pepper. You don’t want the onions to brown, but when they turn translucent add the diced pepper and keep stirring for 5 minutes.

2. Mix the eggs and ketchup then add the dry ingredients. Then add the beef and turkey folding the seasoning into the meat.

3. Shape  the meat into a loaf and place in 9X 9 pan. Drizzle ketchup on top. Bake uncovered for 50-60 min until cooked through. Let stand 10 min before slicing and serving.


I love to plate a slice of meatloaf over a scoop of mashed potatoes and garnish with a little more ketchup or fried onions. Add something green like asparagus or green beans to finish your plate!
