Sullivan’s has made some big changes to their new menu. As always guests can choose to enhance their choice of steak by getting it Oscar Style with lump crab, asparagus and béarnaise or simply enjoying a Signature Butter melted on top such as cajun, gorgonzola garlic, and cabernet goat cheese. Sullivan’s also has the option to add a complimentary housemade sauce including béarnaise, bourbon peppercorn, bordelaise or Sullivan’s Signature Steak Sauce. King of Prussia’s Executive Chef, Dan Kahle, provides his insight on the new bone-in steak selection on the menu.
“Broiling a bone-in steak allows some of the flavor of the marrow to be transferred into the meat. Because the muscle fiber contracts less, as it is held in place by the bone, it results in an overall juicier steak, and the portion of meat next to the bone is shielded from the heat, resulting in tenderness. In my opinion, bone-in steaks are more aesthetically pleasing on the plate, and since we eat with our eyes first we are excited to make many bone-in cuts available to Sullivan’s diners”
