Blueberry Pie

We think it is only appropriate to start our homemade section with the official philmytummy logo and the very first dessert I ever made from scratch, Homemade Blueberry Pie!

What you will need:

For the Filling:
3/4 cup white sugar
3 tablespoons corn starch
1/4 tablespoon salt
1/2 tablespoon ground cinnamon
4 cups fresh blueberries
1 tablespoon butter

For the Crust: (makes 2 crusts- top + bottom)
2 1/2 cups flour
1 tablespoon sugar
3/4 teaspoon salt
2 sticks chilled unsalted butter cut into 1/2 inch cubes
6 tablespoons ice water

To make the crust: Mix flour, sugar, and salt in processor. Add butter; pulse until coarse meal forms. Gradually blend in enough ice water to form moist clumps. Gather dough into ball; divide in half. Form dough into 2 balls; flatten into disks. Wrap each in plastic; chill 2 hours or overnight.

To make the filling: Preheat oven to 425 F. Mix sugar, cornstarch, salt, and cinnamon, and sprinkle over blueberries. Line pie dish with one pie crust. Pour berry mixture into the crust, and dot with butter. Cut remaining pastry into the top, be sure to cut out holes (we made shapes) so the pie has room to breath. Crimp and flute edges. Put some butter on top of the pie to help get that golden flakey taste and look. Bake pie on lower shelf of oven for about 50 minutes, or until crust is golden brown. Let sit four hours to cool.

After it’s cooled, enjoy with a side of ice cream!
